Aqua de horchata is a traditional Mexican beverage is made with rice, freshly ground spices like ceylon cinnamon, plus seeds and nuts (often added in other parts of Latin America).
3⁄4 cup rice, rinsed and drained
2 tsp RawSpiceBar's freshly ground ceylon cinnamon powder or 1 ceylon cinnamon sticks
1 vanilla bean, freshly ground br>3/4 cup sweetened condensed milk or 1 cup almond milk, plus sugar to taste
1. Add rice to a blender and add water to cover. Soak 5-10 minutes. Add spices and vanilla, plus pinch of salt. Blend and drain liquid into a pitcher.
2. Return ground rice to blender. Add milk, 2 cups water and blend again. Drain into the pitcher. Discard remaining rice.
3. Add more water to pitcher slowly, until preferred consistency. Add ice and serve cold.
