Apple Pork Chops


Pork chops
  • 1 cup apple cider
  • 1/2 cup maple syrup
  • 1/4 cup bourbon
  • 2 tbsp brown sugar
  • 2 thyme sprigs
  • 2 garlic cloves, minced
  • 4 pork rib chops, 3/4 lb each



  1. Combine pork chop ingredients (excluding chops) and pour into a resealable plastic bag. Add pork chops and refrigerate for 2 hours.
  2. In a medium saucepan, boil cider & maple syrup over medium high heat until reduced by half, 8-10 minutes. Season with salt and pepper to taste.
  3. Remove the pork chops from the marinade and pat dry. In a large cast-iron skillet, heat the oil until shimmering. Season the chops with salt and pepper and cook over moderately high heat, until browned, 5-7 minutes.
  4. Reduce heat to medium low and brush with glaze. Cook, 5-7 minutes, turning and brushing with additional glaze, until cooked through. Transfer to a platter and serve with RawSpiceBar's Apple Pie Spices compote.
