Healthy Apple Fritters

Light pillow-soft dough packed with fresh fall apples and spices like cinnamon or apple pie spices- these apple fritters are given a healthy makeover with coconut flour and baked in the oven. 


1/4 cup coconut flour
1/8 cup almond flour
1/2 tsp baking powder
1/2 tsp ground cinnamon, freshly ground cinnamon sticks or apple pie spice
1 egg
2 tbsp coconut milk
1/4 cup honey or 1/2 cup sugar
1 apple, cubed (Granny Smith, Fuji or your favorite crisp apple)
1 tbsp coconut oil


1. Preheat oven to 350 F. Line a baking sheet with parchment paper. In a large bowl combine coconut flour, almond flour, baking powder and cinnamon.
2. In a medium bowl, combine beaten egg, honey and milk and combine. Add apple. 
3. To make fritters, add 1-2 tbsp of batter onto baking sheet. Brush with coconut oil and bake, 12-15 minutes. Serve alone or with honey and ice cream or whipped cream and enjoy!
