African Peanut Soup, Vegan
1 tbsp RawSpiceBar’s Berbere Spice
3 tbsp coconut oil
1 onion, chopped
3 cloves garlic, minced
1 inch fresh ginger, minced
2 chili peppers, minced
1 14 oz. can crushed tomatoes (or use fresh if available)
2 tbsp tomato paste
3 c. vegetable broth
1/2 c. peanut butter
1 butternut squash, cooked & cubed
2 tbsp vinegar
Salt & pepper, to taste, plus cilantro, peanuts, to serve (optional)
1. Warm the oil in a large saucepan. When shimmering, add the onion, garlic, ginger, chilis, and RawSpiceBar’s Berbere Spice and cook on medium heat until softened, about 5 minutes.
2. Add the rest of the ingredients, stir well, and bring to a boil. Reduce heat to a simmer. Cook for 20 minutes, stirring occasionally.
3. Season to taste. Top with cilantro and peanuts and serve and enjoy!
