THE SAMBHAR FLAVOR KIT
This month, we’re heading to South India, where vegetarian meals are the norm. Instead of the cream usually found in northern dishes, South India cuisine includes seeds, popped spices, tomatoes, and various dals (lentils). Light meals and snacks, known as tiffins, are also frequently eaten throughout the day.
This month’s flavor kit includes Panch Phoran, a crunchy, toasted, whole spice blend perfect for tossing into or topping roasted potatoes, vegetables, or dals. We’ve also got Sambhar Masala, for making a very famous sambhar dish of lentils, plus any combination of zucchini, eggplant green beans or okra. Lastly, our Mango Chaat, made with tangy mango powder, gives a mouth puckering punch to veggies, fruits salads or crunchy snacks.
